The ruthless wine maker

One thing you learn early on in the wine making process is that it does not pay to be too sentimental when it comes to your vines. Once they stop producing the quality of wine we demand, they need to go.

Early in spring we began the process of removing vines from one of our vineyards. There is something quite forelorn about a pile of discarded vines but we are comforted by the fact that the new vines will soon be in and producing fine wines within five years.
